when I just can’t figure out what to make, or just don’t have the energy for dinner, these are my go to’s":

skillet enchiladas: a one pot meal that will satisfy and give you some gorgeous leftovers. To simplify things grab a rotisserie chicken to get started, and for even less time, skip the tortillas and just eat this with tortilla chips instead.
boursin marry me chicken: one of the easiest dishes out there, made even easier. Serve it over some mashed sweet potatoes, or with some bread to dip into that lush sauce.
pizza beans: cozy, comforting, healthyish. Can’t go wrong. Skip the pepperoni on top *or sub veggie* for an easy vegetarian dinner.
pulled chicken sandwich with fennel apple slaw: the quintessential easy dinner. Pop into the slow cooker with sauce (I list homemade ingredients but feel free to sub for your favorite store-bought), shred, and serve.
coconut lime chicken with crispy basil: the longest part here is cooking the rice. It’s fresh but satisfying, a twist on a classic, and less than 10 ingredients. Skip the fried basil and serve it with fresh to make things even easier tonight.

I always make what you teach us I just made the egg salad for work. Simple delicious. I took pictures to send you but I can't figure out how on this platform😂
