December has been A LOT for me so I’m sure it’s been a lot for a lot of you. So I pulled together seven dinners I’ve been making when “I’m tired but still want something good.”
Here’s what’s on rotation:
creamy crispy leek chicken thighs
one of those dinners that looks humble but tastes wildly special. Inspired by potato-leek soup, you get ultra-crispy chicken skin, melty sweet leeks, and a creamy, lemony parmesan sauce that feels restaurant-level with almost no effort. Plus no waste - we use the whole leek, white parts for sweetness, green tops for a salty crunch.
sweet potato sage pot pie
ok so this one technically 40 minutes but less than 30 of prep. It’s a cozy-weeknight version of a pot pie with sweet potatoes instead of butternut squash (because wrestling a squash on a Tuesday is… no), a creamy sage gravy, and a cheesy puff-pastry top that looks far fancier than the effort it takes.
chicken parm soup (30 if you use rotisserie chicken)
all the comfort of chicken parm but in a one-pot, broiled-cheesy, tomato-rich soup that feels like a hug. Crunchy homemade croutons, and a molten mozzarella lid that turns your dutch oven into an Italian-ish hot tub. It’s nostalgic, hearty, and much easier than making actual chicken parm while still making your house smell incredible.
turkey and stuffing meatball bowls
still craving Thanksgiving flavors? These meatballs taste like stovetop stuffing in the best possible way. Paired with crispy sweet potato fries, a quick kale salad, and a honey mustard sauce for dippin. The meatballs are also perfect for meal prep, freezer-friendly!
ginger beef noodles with sesame slaw
a fast, saucy, weeknight noodle bowl with crispy ground beef, a gingery sauce, and a bright sesame slaw for a great pop of freshness (and to get all your veggies in). A guaranteed rotation recipe.
sheet pan shawarma wraps
pickles, french fries, flavorbomb tender chicken all wrapped in a fluffy wrap and made on 1 sheet pan. All the flavour of your favourite shawarma spot, none of the effort.
30 minute chicken marsala
a quick, cozy classic that tastes like it should’ve taken all afternoon. Golden chicken, deeply caramelized mushrooms, a silky marsala sauce, and a bubbly mozzarella top. It’s rich, saucy, weeknight-easy comfort.
