french onion smashed tots

  • chef’s knife

  • cutting board

  • large sheet tray

  • cheese grater

  • 1/2 bag tater tots (~400g)

  • ~150 ml onion jam

  • 1/2 cup sour cream

  • 200 g gruyere cheese, grated

  • handful of fresh thyme

  • fresh cracked pepper

  1. make your tots

  • preheat oven to 400F. Place tots on a parchment lined XL sheet tray, leaving space between each. Bake for 10 minutes.

  • remove from oven and use a flat cup to squish down to about 1/4 of an inch thick (if your tots are sticking, lightly oil the bottom of the cup and/or wipe between each tot and/or don’t squish down quite so hard). Return to oven and bake for another 25ish minutes until crispy and golden (they MUST be crispy before you top them).

  1. assemble the french onion-ness

  • grate your cheese and prep your thyme while tots are baking.

  • once tots are baked, top each one with a small spoon of onion jam (about 1/2 tsp), the same amount of sour cream, then top everything with cheese, fresh thyme and fresh black pepper.

  • return to oven and bake another 5-10 until cheese is melted and bubbly.
