I missed last week’s Dinner, Sorted, and still feel awful about it. So, to make it up to you, I’m dropping a bonus recipe this week. When I polled on Instagram, most of you voted for easy-as-possible meals (same), but there was still a solid crowd cheering for a bit of a kitchen project. This one’s for you. 🫶

This lasagna has been living rent-free in my brain for ages. To me, it’s a December worthy recipe — a little festive, a little special. So if I don’t share it now, I’d have wait another year to share it, and that simply won’t do. And dare I say, it might be my best recipe yet.

Originally, I wanted to used short ribs, but at $25/kg… not happening. I went with a roast instead and, let me tell you, it worked perfectly. The beef is beyond flavorful, the ricotta balances out the heaviness of the beef, and when I tell you I nearly teared up when I bit into this, I’m not exaggerating. Yes, it’s a project recipe—it’ll take you about 5 hours—but it’s surprisingly simple and nearly impossible to mess up.

Think of it as the ultimate make-ahead meal: prep it in advance, let it do its thing, and you’ll look like you tried way way way harder than you actually did.

Hosting last-minute? This is your move. Or split it into two smaller trays like I did: one for dinner now, and one for that week between Christmas and New Year’s when time is a construct and all you want is to eat something comforting.
