For the crispy halloumi
1 tbsp neutral oil
200 g halloumi
For the beans
1 tbsp neutral oil
3 cloves garlic
1 tsp red chili flakes
1/3 cup white wine or vermouth
3 x 390 ml cannellini/white beans
1 parmesan rind
1 cup chicken or veg broth
1 small bunch lacinato kale
1/2 tbsp white miso paste
1 lemon
1 tsp sherry vinegar
salt
For the herb oil (optional)
1/2 cup fresh flat leaf italian parsley
1/4 cup chives
1/2 cup good olive oil

Pre-recipe prep:


✔️ grate your halloumi on a large box grater
✔️ de-stem and chop one bunch of kale into thin strips, wash well and massage
✔️ slightly drain your beans but reserve a little bit of the liquid
make your halloumi



heat a large nonstick frying pan over medium high heat.
warm 1 tbsp of olive oil and add grated halloumi. Mix and then let sit undisturbed until it starts to get golden (about 2 minutes). Flip and cook until mostly golden. Remove from pan and set aside.
make your beans






turn heat to medium, and to the same pan, add 1 tbsp more oil, 3 cloves minced garlic and 1 tsp chili flakes.
once garlic is golden, deglaze - add 1/3 cup of wine and let it bubble for a minute to cook off and reduce to half.
add all of your beans, 1 cup of chicken broth, 1/2 tbsp white miso paste, and parmesan rind. Set to medium high and simmer for 10 minutes, until broth has mostly evaporated.
remove the parm rind, and mash about 1/3 of the beans. Add in kale and cook for about 3 minutes to until tender.
finish with zest and juice of half a lemon, lots of black pepper, and 1/2 tsp of of sherry vinegar. Taste and adjust as needed.
make your herb oil



while your beans cook, to a food processor blend 1/2 cup of parsley (stems mostly removed), 1/4 cup of chives, and 1/2 cup of olive oil until bright green and smooth (strain it if you’re feeling it).
serve



spoon the beans into bowls, pile the crispy halloumi on top and finish with herb oil.

what to serve this with: this is great as a vegatarian main, but would also be a fabulous side to a roast chicken or chicken thighs.
no parmesan rind? No problem, just add a small handful of grated parm at the end.
