Do you think there’d be a way to do with ground chicken (I’m assuming I’d have to add some spices to it, but not sure what exactly would make sense in the context of the rest of the ingredients/flavours here)?
I think so! For 1 lb I’d add ¾ tsp salt, ½ tsp each pepper, garlic powder and onion powder, plus ¼ tsp dried sage or thyme if you have it. Brown it in larger craggy chunks rather than breaking it up super fine you want to get some good colour on it. Then carry on with the recipe as written - don't be shy with adding more oil too if the pan looks dry with the initial cook.
