Last week Kyle and I were lucky enough to sneak off for a little getaway in Mexico and while I had grand plans of coming home and getting right back to work, the universe disagreed and cancelled our flight. So we spent the last day dazed and confused in the airport and shuttles, but we are home now and eagerly awaiting Reggie’s return from her gmas ❤️
The trip was much needed, I was definitely feeling burnt out so it was different than our usual “find the best food/explore” trips, and more focused on relaxing and winding down. And low and behold, 2 days into lying on the beach and reading Ina Garten’s memoir, I was inspired and madly scribbling down new recipe ideas and itching to get back into the kitchen! I won’t annoy you with dozens of beachside photos but I gotta share some of the food at least!






All that to say I’m a little less organized than I planned to be returning home, so I’m sharing my final app recipe today and we’ll get back to dinner, sorted soon!

brie and apricot bundles
serves 8 pieces | 45 minutes

2 sheets puffed pastry, thawed
8 mini brie wheels
1/4 cup apricot jam
1 large sprig of rosemary
~ 1 tbsp Aleppo chilli flakes
1 egg
salt

prep your puff pastry



preheat oven to 400F and line a sheet tray with parchment paper.
roll out puff pastry on a flat floured surface and slice into 3 inch by 3 inch squares that are about 1/4 inch thick.
assemble






one at a time, on your puff pastry squares, place about 1 tsp apricot jam, a small sprig of rosemary, a sprinkle of aleppo chili flakes, your mini brie pieces and a sprinkle of salt. Dab a bit of water on the edges and close the edges into the centre, sealing the puff pastry.
flip over and place on sheet tray and repeat with the rest.
spread a bit of water on the top of each piece and press in a small sprig of rosemary.
whisk 1 egg in a small bowl, then brush onto pastry. Finish with another sprinkle of aleppo flakes.
bake
return to fridge to chill for 5-10 minutes, then bake for 20-25 minutes until deeply golden on top. Some of them might burst open at the top - don’t worry if they do or don’t, either way they look cool and taste amazing.
serve immediately.

will other cheeses work? I honestly don’t see why not but I also personally have not tried so I’d recommend you test bake one just in case. You can also absolutely use full sized brie and chop it up just know it won’t be a perfect circle when you encase it.
do I need aleppo flakes? I love the mild heat and touch of sweetness these bring but you can sub a TINY bit of cayenne with paprika (1:4 ratio)
can I use another jam: for sure! I love love love this combo but some other flavor combos that would be 🔥 might be cran + rosemary, raspberry + thyme, red chili jam + thyme, brown butter + sweet onions + sage
⏰ make ahead: you can assemble these ahead of time (up to about 8 hours), and keep in the fridge until you’re ready to bake. You can also bake these in advance and pop in the oven at 400F to reheat for about 5 minutes.
