hi hi! and happy saturday!

after a stunning, and much needed little break last week, I’m back and have so many fun recipes lined up. Starting with this week’s: a tomato pasta that somehow tastes like you cooked it for hours… but it comes together in 30 minutes and with just a few pantry staples you probably already have on hand. It’s the perfect mix of peak summer produce and cozy vibes. Light, fresh, and still somehow layered and rich.

We’re talking: jammy cherry tomatoes, nutty brown butter, crispy garlic pangrattato (which is just a fancy word for toasty breadcrumbs - don’t be scared), and just a hint of thyme doing exactly what thyme does best. It’s simple but layered, and best of all, when Kyle (who’s usually very chill about my cooking) took a bite and said “wow, the layers of flavor on this…” well, I was very proud (both of the recipe and how far he’s come in his food journey since we first met. Yes, I will absolutely take a little credit ❤️)

And that’s the whole goal here: to make food that feels a little special, even on a Tuesday.

  • Mandoline (for the garlic - optional)

  • Large frying pan (I don’t recommend a cast iron as the acid from the tomatoes is harsh on it. Opt for a stainless steel or nonstick).
