Welcome to LIFE OF A SOUP GIRL series (for legal purposes I must state this is inspired by Taylor Swift’s Life a Showgirl album… I think).

ICYMI here’s me living my main character life.... glamming it up in a bathtub full of “soup”.

Before we jump in, I wanted to share my non-negotiables when it comes to soup, so you know what to expect around here:

  1. soup around here is NOT boring. It’s textural, layered, beautifully plated, and so good it’s worth burning your mouth on.

  2. 90% of the time, soup must be a whole meal. I don’t want a soup that needs a side quest. For me, the point is one bowl that does it all - cozy, filling, self-contained.
    There are a few exceptions to this rule:
    → The classics. A tomato or butternut squash soup that must have a grilled cheese on the side.
    → The elite. French onion soup, which is untouchable and not to be truffled with.

  3. texture is a must. I simply can. not. eat a bowl of single-textured liquid. No shade to anyone who can, but for me, that’s just not a satisfying meal.

  4. toppings are not optional. Even the laziest soup deserves a moment: chili oil, lemon zest, cheese, something green, something crunchy. It’s the easiest way to elevate and we love an easy elevation around here.

chicken soup but make it buffalo

serves 2-4 | 30 minutes

I call this “grown-up” buffalo chicken soup because to me, a classic buffalo chicken truthfully doesn’t sound suuuper (souper 😜 ) appetizing. It feels like it would be heavy on the cream, and agressively Frank’s hot saucy. Not something I want on a weeknight dinner tbh. This version is much more balanced, giving the essence of everything you love about buffalo chicken, without overwhelming, and just a little bit of fancy 😉
