I’ve been craving cottage pie but making mashed potatoes on a weeknight felt like a commitment I wasn’t ready for. Chips, though… chips I can always commit to.
This is lighter than the classic with fennel and leeks, sherry instead of red wine to lean into the sweetness and the same deep cozy energy without sitting on your chest. The potatoes roast while the base comes together, so by the time everything's done, so are you. No mashing. No extra dishes. Heyo.
And to really bring this home we top with pepper chips and a bit if cheese that gets a little soggy in the best way and almost gives off poutine vibes. It’s like cottage pie’s cooler big sister.
