happy first saturday of 2026!! no new years resolutions over here, no issues with it if you do but I’ve just never been a goal setter really. more of a jump in with both feet and think about consequences/the long term later. but hey it seems to be working so far so I will carry on.

coconut poached shrimp with green brothy rice
serves 4 | 30 minutes
January feels like I need to eat something green after consuming my bodyweight in cheese and chocolate. So this recipe started from that. I wanted something reeeeal easy and shrimp to me is one of the easiest proteins to cook since you can defrost it in minutes and cook it in minutes.
The broth is a good blend of rich but still fresh, and of course we finish with a pop of crunch. We sneak in a ton of spinach that you get to slurp up, so you’ll barely notice it’s there. And the shrimp and broth are ready in the time it takes your rice cooker to ding.

simplify:
use precooked shrimp or chicken: add straight to the bowl and cover with broth at the end to skip the poaching stage
