I refused to cook for my own wedding. Hard no. But I also find most wedding food slightly underwhelming, sorry to say. But like everything I do, the food had to be the star. We had a small enough crew we were able to get a giant table at one of my favorite Italian restaurants . But despite refusing to do the food, I still did want to do something foodie-adjacent and a little special. So we landed on some chip towers as the in-between snack while everyone waited for photos. No cooking required but still a bit of a flavor flex.

For the the flavor combinations we did EXTENSIVE taste testing. The bar was high and we took way too long because it had to be perfect.

People lost their minds. Which honestly tracks, because the right chip at the right moment is undefeated.

But as I do, I vastly overestimated how much people will eat so we had a lot left over. So I crushed them onto chicken instead of breadcrumbs, fully expecting a fun experiment that wouldn’t quite work.

It was the crispiest chicken I’ve ever made. Pre-seasoned, shatteringly crunchy, done in 35 minutes. Since we use dill chips, the orzo underneath had to be a creamy very pickle-forward base cause if you’re going in you gotta go all in. If you’re neutral about pickles, I’m sorry to say this isn’t your week.

can I use other chips: thick cut is the way to go but you can definitely use any other flavor.
