life, sorted

A light week this week - my MS flared up, probably thanks to my foot throwing my whole routine out of whack. As much as my Sagittarius brain HATES it, my body runs on routine. Doctor’s orders were rest, so... sure, I’ll rewatch Vanderpump Rules and eat cookies if you insist!!! And it worked. I’m feeling so much better. Turns out actually resting when your body asks for it makes you feel better. Who knew.

Reggie had a rough week too (if you watch my stories, you saw). She was struggling with the stairs and looked sore, but a good night’s sleep did the trick and she’s back to hounding me for cheese. Turns out she can’t run like a maniac in the dog park anymore, she’s not spring chicken. She’s also exalted herself to couch dog status, and Kyle has officially caved. She’s living her best life.

Anywho, we still have a fab one-pan dinner today and lots more coming this month, so don’t you worry, I’ve still got your dinner sorted!

one pan cider-glazed
sausage & apple gnocchi

Serves: 2-4
Time: ~30 minutes
Dishes: 1 pan
Style: one-pan dinner

you’re ready if you have

shelf-stable potato gnocchi, mild Italian sausage, semi-dry hard cider, chicken stock, Pink Lady apple, fresh sage, kale, whole-grain mustard, butter, black pepper

tools.

  • cutting board

  • chef’s knife

  • large non-stick skillet with lid

  • nylon head tongs

  • salad spinner

  • wooden spoon

  • see more tools…

but…

Does the alcohol cook off? Most of it simmers off as the cider reduces, but not all of it. If you’re avoiding alcohol completely, use the alcohol-free swap above.

Can I use fresh or frozen gnocchi? I developed this with shelf-stable gnocchi. Fresh and frozen release more moisture and cook differently, so I’d stick with shelf-stable here.
