I have been craving lots of veggies this week and also been trying to keep things on the lighter side.

I originally wanted to do thinly sliced beef, but it quickly crossed into “not worth the squeeze” territory. Ground beef turned out to be the better call - faster, easier, and just as good. But I was missing that crunch you get from the ginger beef. Enter, crispy rice paper! It was just what it needed.

serves 4 | 30 minutes

simplify:

  • use pre-minced ginger or garlic

  • skip the rice paper sheets and sub in pre-made crispy shallots

  • buy pre-sliced carrots or use a box grater instead of matchsticking

where to find bib lettuce: I recently heard that bib lettuce is really hard to find in some cities because the restaurants gets first dibs and there isn’t a ton to go around, BUT I finally found some pre-packaged ones at whole foods by Organic Girl
