farmers market finds!

Happy Saturday!

We had a wild start to the week with a sick Reggie, I’ll spare you the details but she had me worried. Thankfully she’s feeling MUCH better. After hundreds of dollars of tests and vet bills, we discovered…. it was nothing 🤦‍♀️

What I did this week:

  • Farmer’s market visits. Things are starting to look freshhhhh. Will be back this weekend and I’ll share more about what I got and what I’m cooking seasonally.

  • I visited a really cute natural wine bar with a friend that felt very Euro summer (bar tartare). They have a rotating chef and it was wonderful trying something new - I had the best cabbage I’ve ever eaten, it was grilled and served over labneh with a homemade “chili crisp” on top. Heaven, and I may have to try and recreate it.

  • And I think that was pretty much it other than cooking up a storm!

grilled pickle-brined chicken skewers + 3-ingredient pitas

⏱️ TOTAL: 1 hour (mostly marinating time)

To say I’m pickle obsessssssed is an understatement. So the second I saw the pickle-marinated grilled chicken skewers on the allrecipes feed, I knew I had to try them.

New grill + chicken on a stick + pickles? It was basically fate. But obviously, I had to Rachel-ify it.

  • I tossed a few versions of potatoes on the skewers - to no avail

  • Tested different pickle-y marinades

  • Even tried a vinegar-soaked chicken (RIP)

  • The original was solid, but not punchy enough. So I kept the base, then amped up the tang everywhere else

We’re pairing this with a super bright, super dilly salad, a creamy dill yogurt crema, and because you know I can’t resist a carb moment, grilled 3-ingredient Greek yogurt pitas to pull it all together.

Like always, you’ve got options:

  • Want to make it all from scratch? You’ll need about an hour (half of that’s hands-off)

  • Need it fast? I’ve got shortcuts to get you 95% there in half the time.

  • No grill? No worries. These work great on the stove or even in the air fryer and I’ll walk you through how below

And the best part? This is the perfect meal if you are hosting a summer dinner - especially if you want to show off your new grill😉. Everything can be made ahead so when people show up, you’re just throwing a few things on the grill and plating like a pro, leaving you free to tell your {insert iconic hosting story here}.
