This week I’m doing something a little different and I’ve handed dinner, sorted over to Jenn Lueke from Jenn Eats Goood. If you don’t know Jenn already, she’s basically the person you call when you want dinner to be delicious, healthy, and not a whole thing. She just debuted her cookbook Don’t Think About Dinner and honestly the title alone tells you everything you need to know about her vibe.
We decided to do this swap because we both exist in the same corner of the internet where “we’ve got your dinner covered, you’re welcome”. And I think you’re going to love her as much as I do.
She’s bringing us honey sriracha salmon bowls with a cucumber-radish salad. Sweet, spicy, fresh, 30 minutes, and exactly the kind of thing you want to be making right now that spring produce is back. I have a whole lot of salmon in the freezer so you know I’ll be making this on repeat.

honey sriracha salmon bowls with cucumber-radish salad
serves 4 | prep time: 15 min, plus 15 minutes chilling time | cook time: 15 minutes

Bowls are my go-to weeknight dinner. My formula usually involves an easy-to-prep grain that cooks in the background, a warm protein, and a fresh veggie for a pop of acidity. The honey sriracha marinade that salmon sits in here is the ideal balance of sweet and spicy without overpowering the other components. I love to cook seasonally and incorporate as much seasonal produce and flavor into my recipes as possible. The cucumber-radish salad is crunchy, fresh, and spring-inspired, and gives a refreshing bite. This recipe also leans on pantry staples throughout, so minimal ingredients are required and each component comes together quickly without scrambling through pantry shelves. Best part? You’ll have a delicious dinner on the table in just about 30 minutes
