one-pan spanakopita pot pie

Since I’ve already droned on a lot I won’t go on too much about this recipe, other than that it’s kind of like a mashup of a spanakopita and a pot pie.. hence the name. But it just works so well with the potatoes giving it both more of a pot pie and a greek vibe, it’s super bright while still being cozy, and I promise the phyllo is manageable, it’s basically meant to be broken anyways so don’t sweat it!
