Happy Saturday!!
This week was a slow one. MS fatigue has been kicking my butt extra hard. Honestly it’s often quietly running the show in my kitchen (and life). But I haven’t really shared before that it’s actually why I create my recipes the way I do.
It’s why my recipes are easy on purpose. It’s why I care so much about efficiency, less chopping, less cleanup, shortcuts that work, and none of that “now make a second pan of something for no reason.” And since I’m far too stubborn to settle for mid food, it’s why I work so hard to make really good recipes as. easy. as. possible. Cause your girl is not settling 💁🏻♀️
I cook like I might need to lie down halfway through. Because sometimes… I do. And frankly I think it’s made me a better recipe writer.
So this week’s dinner is built for exactly that kind of week.

one pan gnocchi with caramelized cabbage and sausage
serves 2-4 | 30 minutes
Quite possibly the easiest recipe I’ve ever made? No chopping required, ready in 20 minutes, 1 pan and 1 spoon dirtied. And truthfully I’d be proud to serve this to anyone coming over for dinner, or even to my hunnay for valentine’s dinner tonight (if you’re a type b human like me and haven’t figured out what you’re making yet). Either way, this one is taking a permanent spot on my I don’t feel like cooking list.
It’s got loads of flavor from the caramelized cabbage, you can use any variety really, but don’t skip it. The sausage does all the hard work for seasoning, and the creme fraiche and dijon elevate it just the right amount. And as always I share subsitution options for most ingredients below!
