Last weekend was PICKLEFEST!! My dream event tbh. All the pickled flavor things you could imagine and everyone there loved pickles just as much (maybe more… ) than me.

And in case you missed it.. Reggie visited the doggy spaw this week and I was overjoyed with the photos they sent me, so I have to share. *the toque is to cover her ears from the noise of the dryer - she’s scared of it. And the robe… I can’t handle it.

If you’ve ever tried to slice raw chicken, pork, or beef super thin, you know it’s like chasing a moving target. The fix? Pop it in the freezer for 20–30 minutes. The slight chill firms it up just enough to glide your knife through. This works great for today’s recipe if you can’t find pre-sliced beef.

Today’s recipe is inspired by:

  1. My deep love of an Italian beef sandwich: the bread, the thin beef, the cheese, the toppings, the dip. Heaven.

  2. Season 3 of The Bear, which has me dreaming (literally) about Italian beef.

The key here? Giardiniera. If you know it, you love it. If not: it’s pickled vegetables, finely chopped to add acid, crunch, and herbs. It makes this pasta sing.

  • Chef’s knife

  • Cutting board

  • Food processor - optional for giardiniera if you can’t find prechopped but you can also hand chop

  • 12 inch nonstick frying pan - nonstick is key for this recipe so the pasta doesn’t stick

  • Plastic spatula - a must on nonstick (wood is fine too - just no metal!)
