Life lately: Last week we had some fun shopping at H Mart and I brought you along for the ride. (ICYMI part 1: the shop, part 2: the taste test). Grocery stores are truly my happy place and there’s nothing I love more than finding a new one when we’re travelling (or even here at home) and discovering all the goodies.

We also had the sun peak out enough to enjoy our first glass of crispy sauvy b on the patio near our place this week and it was heaven!!

But let’s chat food. I asked you, and you asked me for a few more sheet pan recipes, so I happily obliged. I’ve got ONE more today and a special brunch edition tomorrow (with mother’s day coming up I wanted to leave you with some options). But I swear that’s it.. for now.

Today’s recipe is a mashup of mine and Stan’s favorite recipe (Stanley Tucci that is - I’m sure he won’t mind the nickname when we meet for dinner one day). Spaghetti alla Nerano which is the beauty of fried zucchini and some simple seasonings paired with spaghetti for a fabulous dish. But I sheetified it for ease, and added a big hunk of feta per the baked feta pasta trend, and let me telllllllll you… it is heaven.

I know it’s a bit early for zucchini but I wouldn’t hold off on this. Or at the very least keep this one in your back pocket so you are locked and loaded for zucchini season.

slicing the zucchini: I won’t lie this part isn’t fun. If you have food processor with a slicer, use it. If you have a mandoline, use it and take your time. If you’re doing it by hand… spend the $20 on a mandoline.

can I use crumbled feta? No, it will get hard and be unpleasant. You need the block to get that creaminess inside. Worst case, you can use crumbled feta in the last few minutes just to get the melt, but it won’t caramelize the same.
