The second super simple summer side that definitely don’t look simple.
The strawberry white balsamic situation is bright and fresh and honestly good on everything, I’ve been using the leftovers on literally just spinach for salads all week. The fun part - I recently learned that when you soak halloumi it changes the texture and it is AMAZING. It may sound fussy but takes about 1 extra minute of actual effort and gives you this impossibly soft, golden result.
Finished with dill of course, and some almonds to switch things up cause as much as I’d love to we can’t use pistachios on EVERY single dish this summer (but they’d also be great here FYI).

For the halloumi:
2 tbsp avocado oil
1 pack halloumi
2 tbsp honey
2 tsp aleppo pepper flakes
