dinner, sorted: spring asparagus bundles

This is one of those recipes that looks like a such a flex but really you’re just folding squares of pastry around a few good ingredients. Crispy prosciutto, roasted asparagus, lemony whipped goat cheese, and a sweet hit of fig jam, all wrapped up in golden puff pastry and finished with hot honey and pistachios. Sweet and savory with a bit of crunch and you’re giving your spring aspargus a beautiful little home.

This is such a good back-pocket recipe perfect for spring hosting, or mother’s day, or if you’re like me, just taking half the batch for dinner. They come together pretty easily with less than 30 minutes of hands-on time, and they are great hot, warm, or cold.

Why roast the asparagus first? roasting concentrates the flavor and pulls out a ton of moisture, which is everything when you’re wrapping it in puff pastry cause wet veg = soggy bottoms. It gives the asparagus a head start, since the bundles only bake long enough to brown the pastry which is not enough time to fully cook the asparagus through.

Why crisp the prosciutto first? truthfully I’ve never loved raw prosciutto… but it also loses moisture as it crisps, which makes the inside of your bundle wet and keeps the pastry from being crisp. As a bonus, crispy prosciutto gives you a salty crunch that contrasts perfectly with the creamy goat cheese.

I have leftover puff pastry, what do I do with it? don’t waste it! A few easy moves:

  • make any of these beauties: brie and apricot bundles, tomato boursin tart, ham and gruyere and everything bites, sausage rolls with pickle dijon dip

  • cinnamon sugar twists: brush with melted butter, sprinkle with cinnamon sugar, slice into strips, twist, and bake at 400°F for 10–12 min.

  • cheese straws: top with grated parmesan + cracked pepper, slice, twist, and bake the same way.

  • mini jam tarts: cut into small squares, score a border, dollop with jam, egg wash, and bake until golden.

  • freeze it: wrap tightly in plastic + foil and freeze for up to 3 months. thaw in the fridge before using.
