binging: Furious, and I'm fully hooked. I love a cop drama especially of the non cheesy variety (looking at you Horatio Caine 🕶️). It’s heartwrenching for sure but I have been staying up way too late (10pm) to watch this every night.

Today’s is a classic for a reason: chicken, broccoli, a can of cream-of-something, and that buttery crushed-Ritz topping. The casserole that showed up at every potluck.

This is my version, all grown up and made in one pan in about 30 minutes.

Golden chicken goes into creamy garlicky white beans. There’s no can of soup in sight, because the beans and a little sour cream do all that work and make it a lot less heavy, and a lot more weeknightable. The broccoli roasts on top until the edges get crispy and charred. And for another layer o’ flavor and texture a finish with the Ritz, of course.

It’s one pan, so there’s one thing to wash, and the beans mean you don’t need a side so this is the whole dinner.

One thing before you start: don’t skip the vermouth. it’s only a quarter cup, but it does so much, and the bottle keeps in your fridge door for months. (it also makes a great martini … just saying).
