Why soak the bread: soaked bread (panade) keeps the meatballs tender and juicy. Breadcrumbs work in a pinch, but the texture won’t be quite as soft.
What does 80/20 mean: this is ratio of lean to high fat beef and is the best ratio for a juicy but not overly fatty meatball. Most stores “regular” ground beef will be 80/20. DO NOT use lean ground beef as your meatballs will fall apart.
