
green onion cake + kimchi quesadilla

need more veg? add some sauteed mushrooms in the quesadilla
need more protein? serve with greek yogurt instead of sour cream
reheating: pop in the air fryer or back on the stove until warm

For the quesadilla:
2 frozen green onion cakes
100g grated cheddar
1/2 cup kimchi, finely chopped
1/2 cup cooked chicken
For the sauce:
1 cup sour cream
1/2 cup kimchi, finely chopped
2 tbsp kimchi juice
squeeze of lemon
To finish:
green onions or chives

make your quesadillas
place frozen green onion cake on a warm skillet over medium heat.
once golden on one side, flip and top with cheese, chicken, lots of finely diced kimchi, and more cheese. Fold over and press down. Flip to get golden on both sides.
cook until golden and cheese is fully melted.
make your dip
while the quesadillas cook, to a small bowl, mix together 1 cup sour cream, 1/2 cup kimchi, finely chopped, 2 tbsp kimchi juice and a squeeze of lemon. Taste and adjust to your liking.
serve immediately

⚠️ Important Note: if a substitute isn’t listed below, I don’t recommend omitting or replacing that ingredient, as it will significantly alter the final dish.
For the quesadilla:
cheddar: I like cheddar the best here as it’s not super gooey and the cheddar flavor pairs so well with the green onions and kimchi. That said feel free to experiment, you really can’t go wrong
kimchi: can skip or sub something else pickled
chicken: can skip or make it veg with sauteed mushrooms instead
For the sauce:
sour cream: greek yogurt
kimchi + kimchi juice: can skip if you hate it!
