At the beginning of each month, I’m sharing a handful of recipes that match my vibe for the month (see below), plus light suggestions for repurposing leftovers, easy lunch ideas, and printable grocery lists and recipes, all in one place.
You can follow it to a T and get lunch + dinner for 2 people for 5 days, or follow it loosely and spread it over longer. It’s just meant to be an easy way to get a really great week (or two) of dinners without overthinking it. One less thing on your plate, literally.

my food brain in February:
the in between months. I’m over being cold but not over cozy food. I’m over my “wanting to eat SUPER healthy after the holidays” mood but also still want a good balance. I want things that feel comforting but not like I need a nap afterward. As always, I’m craving textures, sauces, crunchy things, but still easy enough that I’m not resenting my kitchen by Wednesday.

buffalo chickpea wraps
(serves 2 | 20 minutes)
tips:
add blue cheese if you love it! (Not on the grocery list)
If you want these for multiple lunches this week, double the ranch and chickpeas now so everything’s ready to wrap later.
Chop all of your lettuce at once and reserve most of it for the chicken taco bowls.
Use the extra wraps later in the week to for the leftover taco bowls to turn into burritos.
