I'm making this for lunch for 5 (for the first time, which I know I'm not supposed to, but I like to live on the edge). Can I just simply double it? I don't think a doubled batch will fit in a 12" cast iron. What about a 6qt dutch oven? Any ideas or tips?

I would divvy it up into two pans or do two batches and put into casserole dishes for the cheese broil. I think the ratios would be off if you put it into a big Dutch oven

So I made it. Super delish! I used the TJs soup that you used, plus some other box of butternut squash soup. I'm not sure which 2-4 people you are feeding, but just one batch would have been fine for 5 people, with leftovers. But I made two batches simultaneously, which was super easy to do, and I ended up with enough to feed an army. There were 5 servings right away, then 2 people took 1 serving each for lunch, 1 person took 3 servings for dinner the next night. Then we had 2 giant dinner servings and 1 lunch serving. That's 13 servings! And nobody was hungry. Luckily, I didn't have to buy extra groceries to make 2 batches. So yum! I will make (ONE) batch again, soon! PS, I used 1 lb of italian pork sausage, not in casings, instead of 5 sausages. It was plenty, and I didn't have to squeeze anything.
