Normally I’m a picky B about pizza crust, but sometimes when you really want pizza in 15 minutes and don’t want to deal with a crust, just do it, get the pre-made crust. This one has such good toppings, any base will do the trick.
And before you @ me about fruit on pizza, yes I am a ham and pineapple fan, no need to yuck my yum if you aren’t.
Since we’re using pre-made/cooked dough, all the "work" is really just assembly. Or feel free show me up and use a proper dough and please invite me over for a slice. The trick is in the layers of flavor: a spicy calabrian marinara instead of plain red sauce, thin peach slices for a juicy bit of sweetness, spicy salami for another pop, and dollops of mascarpone to lighten things up with an almost custardy finish in the oven. An ideal easy showoff dinner for a friday night hang.

For the pizza:
2 pre-baked pizza bases
2 tsp olive oil
1 large juicy peach
1 cup marinara sauce
2 tsp calabrian chili paste
100 g spicy salami
200 g dry pizza mozzarella
½ cup mascarpone
To finish:
Fresh parm
Fresh basil
Hot honey

Prep



preheat oven to 450F.
grate your mozzarella.
peel and cut the peach. Slice into thin half-moons, discarding the pit.
brush the edges of both pizza bases lightly with the olive oil.
Assemble



dollop the marinara over both bases along with the calabrian chili paste and spread evenly across
arrange the peach slices with some space between each.
sprinkle over grated mozzarella, then scatter with torn salami.

bake 10–12 minutes, until the cheese is bubbling and the edges are deeply golden.
