the only way I like stuffed peppers

I've honestly never really been a stuffed pepper person the ratios are always off, and by the time everything's baked through, the filling turns kind of mushy. But alas, I have fixed both problems. They're made in long peppers instead of bell peppers (though bell peppers work fine too, just require a longer cook time), which means way less pepper and way more of the tangy, pizza-inspired filling. We’ve got sausage, not 1 but 3!! cheeses, tomato paste, and a hit of pepperoncini brine that keeps every bite bright instead of heavy. All that extra surface area also means the rice actually gets to crisp up in the air fryer, which is the one textural thing regular stuffed peppers never quite deliver. Oh, and these are air fryer-only, because it's summer and my oven isn't turning on for anyone.

tips.

make it GF: ✅

make it DF: ❌ you need the dairy to balance things out - I can’t confidently say these would be tasty with no cheese.

simplify: a microwave rice pouch skips cooking rice from scratch entirely.

storing: keeps in an airtight container in the fridge up to 3 days.

I can’t find long peppers: bell peppers will work fine, just note cook time jumps to closer to 30 minutes since they’re deeper.
