Gravy cannot and should not be skipped from a holiday menu. It rounds out the meal, it goes with pretty much everything, and if things go south, it can save almost any dish. So it better be good!

There are a few key things required to get that deep, rich flavor:

  1. Bringing the flour and butter to a golden color before adding in the stock is your first layer of flavor

  2. Adding in drippings packs in all the flavor you worked so hard on from the turkey.

  3. And the final key, acid. Balsamic vinegar really rounds out the gravy bringing it a complexity you didn't know you were missing.

After many tests of many techniques, this is my favorite simple way to make gravy from scratch.
