A classic dish for Thanksgiving with a little Rachel twist. To me you have you have to have some orange on the table and this is the easiest and tastiest way.
My preference for this dish is to chop up some thick carrot chunks to keep the carrots on the firmer side, but if you want to get fancy you can use whole mini carrots, rainbow carrots, and even throw some parsnips or other root veg in there too.
No matter what carrots you use, this dish is sweet and salty with a little smoke and a touch of heat.
