Do you need 2 potato dishes for Thanksgiving? No. Will people be in awe if you do? Yes.

This is another recipe that has so many versions I didn't think it needed reinventing. The original inspo is from a NYT recipe that I made a few times as my addition to a family dinner and it was a huge hit so I would be amiss to not include. I favour this over a regular gratin as it's not overly cheesy and heavy for an already heavy meal, while still being lush and creamy with a crisp topping.
