Welcome to the first this week’s dinner, sorted meal plan! I hope you had the most wonderful holidays, and I don’t know about you, but I am absolutely jazzed for 2025. Mainly because I have SO many recipe ideas I can’t wait to share with you. ❤️
You might have noticed this email hit your inbox on a Saturday instead of the usual Sunday—and for good reason!
I always post my dinner, sorted videos on Saturdays, and it feels wrong to make you wait until Sunday to get the recipes. Now, you won’t have to!
Sharing the meal plan bright and early on Saturday gives you plenty of time to shop and prep for the week ahead.
If you missed my announcement last week, here’s a quick recap of what this whole meal plan is all about:
I’m not a fan of traditional meal prep where you spend hours on Sunday cooking, only to eat the same microwaved meal five days in a row. This meal plan is my better-than-meal-prep solution. It’s designed to save you time while keeping your dinners fresh, delicious, and easy.
Here’s how it works:
On the first and third Saturday of every month, I’ll drop a 5-day meal plan exclusively for paid subscribers (this first one is free for everyone to try out though ❤️ ).
Each meal plan includes 5 complete dinners (protein, veg, starch) for two people, with occasional leftovers for lunch. The recipes are intentionally simple and use overlapping ingredients (especially pantry staples), so you won’t need to buy a ton of random items every week. But don’t worry—simple doesn’t mean boring. These meals are always flavorful, exciting, and even “wowie” enough to serve guests.
You’ll get a printable prep list, recipe cards, and combined grocery list with substitution options for the entire week. The prep list is to help you get organized for the week, so you can prep as much (or as little) from the list to make cooking throughout the week so much easier.
BONUS: on some recipes I’ll include “BONUS” ingredients. Things that will add to the recipe but if you don’t have on hand/don’t want to buy, the recipe will still be fantastic without it.
Here’s the magic: Spend just 1-2 hours on the weekend working through the prep list (think chopping veggies, marinating meat, cooking rice, etc.). When it’s time to cook dinner, you’ll have a fresh meal in just 15-20 minutes. Yes, really! Pretty simple I hope, but please let me know if you have ANY questions/comments/concerns.
And don’t worry I’ll still be dropping plenty of other free and paid recipes, think of this more as an add-on.

Without further ado, let’s dive into this week’s plan...
the menu
Monday: caramelized hoisin pork tacos. We’ll use half of the large pork tenderloin today and the other half for our pork and broccolini sandwiches on Thursday. If you aren’t doing pre-prep, slice all the pork today and save half for Thursday.
Tuesday: french onion meatballs. If you aren’t doing pre-prep, cook all your broccolini today (the same way) and save half for the sandwiches on Thursday.
Wednesday: red curry meatballs. If you aren’t doing pre-prep, cook an extra 1 1/2 cups of rice for Friday.
Thursday: pork tenderloin and broccolini melts. We use the second half of our pork tenderloin along with the leftover roasted broccolini from Tuesday.
Friday: spam and pineapple fried rice. If you really aren’t keen on spam, swap out a ham steak instead. This recipe yields 4 servings so you’ll have some leftovers for the weekend! And you can basically throw any leftover veg/herbs/protein you have from the week into this 🙌
Grocery list + substitutions
Bonus ingredients are items I don’t want to make you buy for using a small amount. The recipes are equally great without them but if you have them or are ok with buying them as you know you can use it up, I include how to use them to make the recipe even better 🌟
Prep in advance list
Completely optional, but everything you can prep in advance to make your week easier. Do none, a few, or all of them!

And SPAM? That is a pantry staple here, but haven't seen a recipe for it online in a long while. One of our camping favorite dishes is spam carbonara. And I can't say spam without thinking of Monty Python's skit.
