this week’s lazy list: 15 minute lunches for when it's too hot and you're too busy
It’s that point in the summer where I’m hot, tired, somehow busier than ever… and the idea of cooking lunch feels laughable. I keep opening the fridge like something new is going to magically appear. (It doesn’t.)
But I still want lunch to feel good. Not like I’m just picking at random leftovers or panic-ordering something I didn’t even want.
So I’ve been leaning into these no-cook, low-effort lunches. Just smart combos, great flavor, and minimal minutes of assembly max. They make me feel a little more like myself in the middle of the chaos.
Think of this as your “it’s too hot and I’m too tired but I still want something cute” lunch series.






micro chopped salad stuffed pitas
why it's perfect: when you want to feel like you're eating healthy but also want your salad to feel like a sandwich. The micro chopping means every bite has all the flavors without any of those annoying giant lettuce pieces that fall out everywhere.
lazy girl hack: buy pre-chopped salad instead of mine, and/or use store-bought tzatziki for the dressing. OR chop a ton of veggies at once, and mix the dressing fresh so you have lunch for the week in even less time.
chipotle chicken caesar tostadas
why it's perfect: rotisserie chicken strikes again! These have all the flavors of your favorite Mexican restaurant but you can eat them in your pjs without judgment.
lazy girl hack: use pre-made tostada shells, rotisserie chicken, your favorite store-bought dressing, and bagged coleslaw mix. And if you’re doing the the chipotle caesar dressing - make extra and use it on everything all week (eggs, salads, sandwiches, your soul).
cottage cheese bruschetta toasts
why it's perfect: this is what happens when you take the best parts of a caprese salad and make it into something you can actually eat as a meal. Fresh, creamy, and fancy enough that you'll forget you made it in approximately 3 minutes. (And high in protein if that’s your jam).
lazy girl hack: make a big batch of the tomato mix to have all week and thank me later.
cottage cheese lemon poppyseed pancakes
why it's perfect: the cottage cheese makes these protein-packed enough to actually keep you full, and the lemon poppyseed tickles that craving for a muffin, but you can haev it as your whole meal (not saying you can’t eat a muffin as a meal either but I’ll be hungry in an hour if I do). Summer magic.
lazy girl hack: make a few batches and pop them in the freezer. Throw them in the toaster when you’re ready to eat. And throw some of those abundant summer berries on top.
crispy rice tuna bowls
why it's perfect: this is restaurant-quality lunch that makes you feel like you have your life together. The crispy rice situation is basically magic and it makes a can of tuna feel fancy.
lazy girl hack: if you don’t have leftover rice, grab a bag of microwaveable. ANd next time you’re making rice - make extra and pop it in the freezer for this.
bbq chicken and cheddar sandwich with smoky dill mayo
why it's perfect: you know I love a sandwich - this one screams summer and has all my favorite things - chips, cheese, pickles. Treat yourself to this instead of that $20 one from the deli. You can throw it together faster than UberEats can deliver.
lazy girl hack: this one is pretty simple already, but a pro tip is to soak the onions in cold water for a minute to get rid of that aggressive post lunch onion breath. You’re welcome.

I’ve done the browsing for you! one less task to check off
my favorite cottage cheese: this is the one that actually tastes good and has the perfect texture for those pancakes. Sadly it’s not available in Canada, so if you have access to it, please have some extra for me ❤️
glass meal prep containers: I’m no stranger to a plastic deli container, but I’m trying to reduce my plastic use…. These glass ones are a game changer for storing all these lunches and they actually stack properly.
insulated water bottle: because staying hydrated when it's this hot is non-negotiable, and ice water makes everything better. This one keeps drinks cold for literally 24 hours, trust me! Plus the color combos are so satisfying.
nonstick pan that actually works: for crisping up that rice in the tuna bowls. This one heats evenly and nothing sticks, which is crucial when you're too lazy to deal with scrubbing burnt rice off the bottom of a pan. My cost per use on this pan is too low to count!
poppi soda: I love a crispy bev with lunch but I don’t like the slump of a super sugary one. So I love my poppi’s (or a crisp DC).

Love this. The cottage cheese lemon poppyseed pancakes look so fluffy and tender. I have made similar ones with ricotta but never cottage cheese-- what a brilliant idea!
