Happy Saturday!
It’s officially summer recipe season aka my favorite kind of recipes. This week I’ve been really feeling the sunshine, and I finally hit up the farmers market. Came home with some fresh zucchini and loads of grillable things. YUM.
On that note, I also got a new Weber grill (not an ad, just love a shiny new toy), and I am so ready to break it in. Grilling is one of those things I genuinely love doing. It’s fast, flavorful, and makes even the simplest dinners feel a little special. So if you’ve got any grilling questions, or something you’ve been nervous to throw on the BBQ, send it my way. And a quick but heartfelt thank you for all the support on the MS video I shared on Instagram last week. this weeks recipe: warm potato salad with bbq chicken, corn & scallion ranch

I’ve always been a potato salad girl. Always have been, always will be. A restaurant I worked at a few years ago served this warm potato salad that was absolutely ridiculous and honestly, I think about it a lot.
But if you know me you know I’m also a proponent of cramming everything into one dish so it’s a full meal and I'm not juggling a ton of different components. So I set out to make a warm potato salad that can hold its own as dinner.
Enter: bbq chicken, sweet corn, sharp cheddar, scallion ranch… aka the ultimate summer combo.
And as always, I want this to be as easy as possible.. so we’re throwing it all on a sheet pan. Fewer dishes, more flavor, and the oven does most of the work while you mix up the sauce.
And hey, if it’s too hot to crank your oven to 425ºF? No problem, this works great on the grill too (details below).
