For the ricotta:
1 cup ricotta
2 tbsp olive oil
pepper
For the brown butter toast:
2 slices good bread
4 tbsp butter
Optional toppings:
Honey or hot honey
Lemon zest
Flaky salt
Fresh herbs (thyme, chives, or parsley)
Crushed nuts or chili flakes

make the brown butter
add 4 tbsp butter to a small skillet over medium heat. Cook, swirling occasionally, until melted, foamy, and nutty with browned bits at the bottom, 3–5 minutes. Remove from heat immediately and let cool.
whip the ricotta
add 3/4 of the brown butter (reserving a bit for the end), 1 cup ricotta, 2 tbsp olive oil, 1/4 tsp kosher salt, and a few cracks of black pepper to a food processor.
nlend until completely smooth and fluffy, scraping down the sides as needed, about 30–60 seconds. Taste and adjust seasoning. (If your ricotta is very thick, add 1–2 tsp water or cream to loosen). Spoon into piping or ziploc bag (cut the corner off if using a ziploc)
toast the bread + assemble
toast 2 slices bread until deeply golden and crisp, either in a toaster or a skillet. Squeeze the whipped ricotta over each piece of toast and finish with remaining brown butter, honey, and any other topping you like.
