Buffalo Chicken Lettuce Wraps

1/3 cup Frank's hot sauce

1/4 tsp garlic powder

1/4 tsp onion powder

1/2 cup sesame seeds

2 tbsp olive oil

Produce

1 carrot

3 stalks celery

Romaine lettuce

Chives for garnish

2-3 chicken breasts

Dairy

1/4 cup plain skyr

2 oz blue cheese

Prep your chicken

Slice your chicken in half lengthwise. Season with salt and pepper. Place sesame seeds on a shallow plate, dip chicken in and press down to let seeds stick and coat on all sides. Set aside and let rest for 5 minutes to let the seeds stick.

Cook your chicken

Heat 2 tbsp olive oil in a large frying pan over medium heat. Cook chicken until golden brown on both sides and chicken is cooked through - about 2-3 minutes per side. Remove from heat and set aside.

Mix it all up

To a large bowl, add finely diced celery and carrots, 1/4 cup plain skyr, 1/3 cup franks hot sauce, 1/4 tsp garlic powder, 1/4 tsp onion powder, and cooled, diced chicken. Taste and adjust with more hot sauce if needed.

Serve

Serve in lettuce leaves and top with blue cheese and fresh chives.
