2 eggs
1/3 cup milk
1 cup cottage cheese
1/4 cup maple syrup plus more for topping
2 cups high protein waffle mix (I like kodiak cakes)
1 tsp cinnamon
1 large apple
1/2 cup grated white cheddar, divided
4 cooked turkey breakfast sausages
cooking spray

what sausages to use: I like the Costco clean pre-cooked turkey sausage - I cook them in the air fryer before chopping them up. You can use any uncooked sausage as well, just pan fry it and lightly cool before adding.
📦 storing: store in an airtight container or bag in the fridge for up to 1 week, or in the freezer for up to 3 months.
🔄leftovers + reheating: eat room temp or pop into the microwave for 30 seconds. If eating from frozen, pop into microwave on defrost for 30 second increments until lightly warm.

blend the wet ingredients
preheat oven to 350F.
to a base for your immersion blender, add 2 eggs, 1/3 cup milk, 1 cup cottage cheese and 1/4 cup maple syrup. Blend until smooth
mix the dry ingredients
to a large bowl, add 2 cups high protein waffle mix (I like kodiak cakes), 1 tsp cinnamon , 1 large apple diced finely 1/4 cup grated white cheddar, and 4 cooked, diced turkey sausages. Mix well.
add wet ingredients to dry and mix until just incorporated - don’t overmix.
assemble
grease muffin tins well (don’t use paper liners), scoop about 1/3 cup into each muffin tin. Top with remaining cheese and a drizzle and of maple syrup.
bake for 15-18 minutes until cooked through and golden on top (broil for the final minute if needed).
let cool in the tin for 3-5 minutes then wiggle the muffins out and finish cooling on a wire rack.

⚠️ Important Note: if a substitute isn't listed below, I don't recommend omitting or replacing that ingredient, as it will significantly alter the final dish.
milk: water
cottage cheese: can skip and sub about 1/2 cup additional milk (you want a thick but slightly loose dough
maple syrup: use more or less per your sweetness liking
cinnamon: can skip
apple: can sub another fruit or veggies
white cheddar: any firm cheese will work
turkey breakfast sausages: any sort of cooked sausage works

We had to bake ours for nearly triple the recommended time, but these were outstanding. My one year old ate three this morning lol
