creamy mushroom & thyme chicken orzo bake

serves 2-4 | 30 minutes

Another one-pan dinner to add to the rotation. This one leans hard into mushrooms for maximum umami. It’s cozy but not heavy and rich without feeling overdone. A small, slightly unexpected ingredient gives it a boost that makes it dinner-party worthy, while still being totally doable on a weeknight. Hurray!

  • 1 1/2 lbs boneless, skinless chicken thighs

  • 2 tbsp oil

  • 16 oz mushrooms

  • 1 tbsp butter

  • 1 shallot

  • 3 cloves garlic

  • 1 tbsp fresh thyme leaves

  • 1 tbsp Dijon mustard

  • 1 tsp white miso

  • 1 tsp chili flakes

  • 1/2 cup dry Marsala wine

  • 1 1/2 cups orzo

  • 3 cups chicken broth

  • 1/2 cup whole milk

  • 2 oz cream cheese

  • 1/2 cup finely grated parmesan to finish

  • lemon to finish
