
Last week you asked for a sheet pan series so I’ve been hard at work building it ever since. And here we are!
But let’s be clear about something before we start: these are not your average sheet pan recipes. This isn’t dump everything on a tray and hope for the best. What I’ve been working on is figuring out the right order to add things, the right timing, and the techniques that actually make a difference, so that you’re still doing the least amount of work possible, but the result is genuinely better than it has any right to be.
This first one makes the case. You’re building a flavour base directly on the pan first, cooking the sausage so it browns properly, then adding everything else in stages so that by the time it comes out of the oven the pasta is cooked through, the sauce is thick and jammy, and the cheese on top is properly golden and crisp across the pasta - not just the corners. The whole thing.
That’s the sheet pan difference. More surface area, more crunch, more of everything that makes baked pasta worth making. Let’s go!
