The best part of the dishes are the leftover options they provide - who really doesn't like the follow on leftover mashups over the next week (longer if you have a good freezer). This looks incredible and adaptable (no potatoes, but thinking queso fresco would pair nicely with the mole negro gravy on our smoked turkey.
