1/3 cup mayo
1 anchovy
Bread for 2 sandwiches
1 clove garlic
1 lemon
2 heirloom or beefsteak tomatoes
Butter lettuce
8 slices bacon
Place bacon in a single layer on a parchment lined sheet. Place in cold oven and turn on to 400F. Cook for about 20 minutes total including heat time, checking at 20 minutes and adding a few more minutes if needed (depending on how crispy you like your bacon).
Remove from oven and place bacon on paper towel lined plate.
To a bowl, add 1 clove minced garlic, 1 anchovy and a pinch of salt. Using a fork, mash the anchovy in with the garlic and salt until it forms a paste. Add in 1/3 cup mayo, zest of 1/2 lemon and 1/2 tbsp lemon juice. Mix well, salt to taste, and set aside.
Toast your favorite bread, thickly slice your tomatoes and sprinkle with salt and pepper, then assemble your sandwiches.
The order from the bottom up: bottom bread, bacon, tomato, lettuce, anchovy mayo, top bread.
