Boursin and Giardiniera Stuffed Chicken

1/3 cup your favorite giardiniera

1 cup corn flake crumbs

1 tsp dried oregano

1 tsp dried basil

1 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

Stuff your chicken

Butterfly your chicken breasts lengthwise. Finely chop your giardiniera. Get some toothpicks ready (about 16).

To each chicken breast, spread 1/4 of the Boursin and 1 heaping tbsp of your giardiniera and roll the breast. Secure the ends well with toothpicks and any other spots that might pop open. Set aside and repeat with all 4 breasts.

Bread your chicken

To a shallow bowl, add 1 cup corn flake crumbs, 1 tsp dried basil, 1 tsp dried oregano, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt and a few cracks of fresh pepper. Mix well.

Drop each rolled chicken into the bread crumb mixture and coat with a thin layer. You just want a thin layer but if it's not sticking at all, spray with a bit of oil first to help stick.

Cook your chicken

Once the rolls are all coated, spray your air fryer basket with oil, place the rolls with the open side facing up in the basket and spray them with a thin coat of oil.

Cook at 400 for about 15 - 20 minutes until the internal temp reads 165F and the outside is golden brown. Remove from air fryer and let cool for 5 minutes so the cheese can firm up a bit. Remove toothpicks and serve with a veggie of choice - I love corn with this.
