9 tater tots
1 tbsp kewpie mayo
1/2 tbsp sriracha
1 tbsp maple syrup
3 flour taco shells
Chives for garnish
3 brown sugar sausage links
4 eggs
Make your tots according to package instructions, get them super well done for extra crisp. (I airfy mine at 400 for 8-10 minutes).
To a small bowl add 1 tbsp kewpie mayo, 1/2 tbsp sriracha and 1 tbsp maple syrup. Whisk and taste, adjust to your liking of spice vs sweet.
Place 3 flour shells on a flat surface. Remove sausage from casing and press onto tortilla into a thin layer, squishing to the outer edges (it will be a thin layer). Set aside.
Crack 4 eggs into a bowl, whisk well. Add to a nonstick frying pan over medium heat. Season with salt and pepper. Using a spatula, lightly mix every 10 seconds so the egg sets a bit before each stir and you get large chunks of scramble. Cook to your desired doneness.
While your eggs are cooking, fry your taco shells. Fry on medium high, meat side down, for 30 - 60 seconds until golden and meat is cooked through. Set aside.
Top shells with your scrambled eggs, halved tats, a drizzle of sauce, and lots of chives. Enjoy
