2 cup mashed potatoes, cooled
8 sheets spring roll wrappers
Neutral oil
Chives for garnish
4 strips bacon, prepared
1/2 cup shredded cheddar
Sour cream for garnish
Scoop ~1/4 cup of cooled mashed potatoes into spring roll wrapper and roll, sealing seams with water. Repeat with all rolls.
In a small frying pan, heat 1/2 inch of oil over medium high heat. Once hot, in batches of 2-3, add rolls and cook until golden on all sides - about 1 minute per side. Remove from oil and place on cooling rack.
Serve rolls with sour cream, chives, bacon and shredded cheddar.
