These are best to make ahead so you can refrigerate the bite and serve them as cold as possible. Keeping them cold keeps them nice and firm.
Balsamic Glaze

Watermelon
Fresh Mint
Feta
Dice watermelon and feta into same size cubes (about 1 cm square cubes). Refrigerate watermelon for a few minutes before assembling, as it firms it up and makes it easy to pierce.
Assemble bites with a piece of watermelon, feta, mint leaf, watermelon and skewer it with a toothpick. Place on plate and refrigerate until serving.
When you are ready to serve, drizzle with balsamic glaze and finish with chopped pistachios and flaky salt.
